Nutrition in the headlines again - or it should have been!

I just finished reading this book, The Big Fat Surprise: Why Butter, Meat and Cheese Belong in a Healthy Diet by  Nina Teicholz (https://thebigfatsurprise.com/)
It's familiar territory to me, but what an indictment of our nutrition authorities! Nina documents the shocking refusal of so-called nutrition experts to entertain the idea that there might be another way to look at the issue of saturated fat, instead accusing those who have studied the research carefully of 'quackery' for suggesting that saturated fat is not bad. They simply refuse to look at all the research with an open mind - a very bad habit for anyone calling themselves a scientist!

Two recent stories in The New York Times (one after the other in my large print weekly edition) make me wonder if we’ll ever get the nutrition right!
relates the problems nursing homes are having taking care of massively obese patients. And I’ll bet they are feeding them the very low fat high carb type of diet that made them fat in the first place, since that is the standard diet in nursing homes. And that is what we’ve been told is a healthy diet for nearly 40 years - still recommended in the government’s 2015 Dietary Guidelines for Americans.
This is what guides food policy in many institutions, including our public schools.  Pity the poor children that can have low fat chocolate milk with extra sugar, but not the whole milk that is truly nourishing – and never any butter on their tasteless vegetables.

Which leads me to the other shocking article, where nutrition is completely ignored, as babies are given drugs for problems that are probably the result of missing nutrients.
Imagine giving babies,  or even toddlers, Prozac or Risperdal for depression! The doctors who prescribe these drugs know so little about nutrition, they have no idea that faulty nutrition of the child or even the mother could be at the root of the problem. Yet good nutrition is essential  for the brain to work properly. The influence on behavior of several common nutrient deficiencies is detailed in this article:
And good natural fats, like butter, are needed to absorb several of these important nutrients.

Where are the Innovators?

In response to the Editorial on page 37 of the October 10-16, 2011 large print weekly of the NYTimes, titled "Where to Find the Innovators?"(They are always changing the name!) I wrote this response - but was too late to send it.

What do you mean 'Where are the innovators?' There are plenty of innovators but they are being systematically squashed!

There are innovative eco-farmers who are producing super nutritious, tasty and highly productive farm products, using innovative, sophisticated, ecologically friendly, sustainable techniques, but they have been ignored or belittled by conventional agricultural experts.

There are small eco-farmers and their customers who are producing wonderfully nutritious and innovative value added products, but they are crushed by burdensome, irrational, often arbitrarily applied regulations which have little to do with real food safety, but are true job killers. Read famed, truly innovative eco-farmer Joel Salatin's book, Everything I Want To Do is Illegal, to see what innovation killers those regulations can be. (Summary article)

There are unconventional health professionals who are not only curing cancer, but also guiding their patients into how to prevent it and a host of other chronic diseases in the first place, yet they are regularly disparaged as quacks and frauds by establishment medicine and often threatened with loss of their license to practice.

The public has been led to believe that the latest drug is truly innovative, when in fact the really innovative, effective, and relatively low cost non-drug approaches being used by knowledgeable nutritionists face all kinds of regulatory barriers, while the practitioners are attacked by the dietetic police for not having the "proper credentials," or not following proper protocols.

Wall Street's insistence on short term profits is behind much of this - so hurrah for 'Occupy Wall Street'! An end to the collusion between big corporations and government!

Interesting article! Too bad he picks on Ornish as an example of healthy eating. He's headed in the right direction except for his misplaced fat phobia. People are forever misunderstanding the value of natural saturated fats to avoid excess carbs and excess polyunsaturated fats, and spare the essential fatty acids.

I should add that the biggest barrier to sensible healthy eating government policy is the adverse affect it would have on the ag, food, pharm, & medical industries, which have far too much influence on our politicians and bureaucrats. Otherwise why would they continue to promote a low saturated fat ,high carb diet in spite of all the evidence that saturated fat is not bad and limiting carbs can be very helpful.

The unemployed could be put back to work at satisfying and rewarding work raising the high quality food needed on well managed ecological farms, preparing that food for sale, and doing all the 'green' jobs that need doing to rescue our environment from the edge of disaster. And if we didn't have the worry and expense of rampant disease, we could support the arts, education, and other worthy enterprises that get short shrift these days.

Some have commented that ill health is mostly hereditary - this is only slightly true. Unfortunately unhealthy parents pass on their unhealthy habits to their kids. Actually the holistic doctors and naturopaths would be kept busy helping everyone fine tune their health, helping them recover from the ravages of our present junky food and toxic environment. It is the experience of many people who have changed to a healthier diet and lifestyle to overcome one health problem, that other problems are also resolved - health problems are often linked in ways we don't understand. A truly health body resists cancer, supports a healthy heart, healthy blood sugar, healthy blood pressure, healthy digestion, and has a happy disposition.

Don't tell me you can't afford to buy healthy food - you can't afford not to! You can even start to raise some of that food yourself. The higher the quality the less you'll need or want to eat!

There are links to a variety of healthy eating guides on my website. Just remember, people vary - some do better eating more vegetable, others do better eating more meat (with the fat). Refined carbs and omega-6 polyunsaturated fats need to be limited. And the best news is that high quality healthy food is wonderfully tasty!

Response to "Call To Action" by Sen Baucus

Response to REFORMING AMERICA’S HEALTH CARE SYSTEM: A CALL TO ACTION
By Senate Finance Committee Chairman Max Baucus (D-Mont.)

As a dietitian I am concerned that one crucial element is missing in all the discussion about reforming our health care system. The Baucus Call to Action calls for "a "RightChoices" card that guarantees access to recommended preventive care, including services like a health risk assessment, physical exam, immunizations, and age and gender appropriate cancer screenings recommended by the U.S. Preventive Services Task Force." Unfortunately this type of 'preventive' care is a path into the pharmaceutical-based care that medical doctors are trained in, which is the path we are presently on - more obesity and chronic disease treated with drugs, not the lifestyle changes that are needed. Medical doctors are not taught how excellent nutrition with careful supplementation and detoxification can heal the ailing body and prevent more serious problems, unless they go out of their way to get special training later in their career when they realize the problems that relying on drugs causes. In fact medical doctors, and even conventional dietitians, are taught to consider many effective nutritional therapies as "food fallacies," and doctors who use nutritional therapies (sometime called Complementary and Alternative Medicine or CAM) are attacked by their medical boards, and some even have their licenses removed because they did not follow 'accepted protocols,' in spite of the healing and vibrant health they have brought to their patients.

An example is John Dommisse, M.D. www.johndommissemd.com , who had his license revoked by the Arizona medical board, in spite of his accomplishments. The medical board acted outrageously to squash a doctor using innovative nutritional approaches, as his efforts to appeal have been rejected on trivial grounds. As he says on his website "nutritional medicine is much more successful and effective in chronic diseases than standard/conventional medicine is."

Something similar is happening in the state of Washington, as related by Dr. Jonathan Wright, M.D. in his newsletter http://tinyurl.com/jonWright, quoting: "Unfortunately, holistic physicians in Washington state are under political attack by the Medical Quality Assurance Commission (MQAC). Several physicians are being persecuted by MQAC because they offer their patients holistic healthcare. These doctors are being dragged through hearings and are under investigation because the MQAC believe that these doctors should have their medical licenses revoked for not practicing "traditional" mainstream [drug-based] medicine." (Please understand that drugs are crutches that cover up symptoms, but rarely correct the underlying cause, and often cause side effects that lead to the use of another drug, and another, and another.)

These are the very doctors who will bring down the cost of health care by leading their patients toward healthier lives at relatively modest cost! We must break the monopoly that pharmaceutical therapeutics has on our medical care system. CAM must become a standard of care taught in our medical schools, and supported by the medical establishment. CAM practitioners, including naturopaths and well trained nutritionists must be recognized as effective sources of guidance for patients seeking holistic health care. When insurance companies see the dollars saved by these alternative therapies, they will begin to insist that all doctors become skilled in the use of these therapies. They might even push for reform of our food system, as noted by Michael Pollan in a recent New York Times opinion piece, called Big Food vs Big Insurance

I see nothing in the current health care reform proposals that would give an incentive to citizens to lead a healthier lifestyle, for example, by avoiding the processed foods that are so detrimental to health but fill our grocery store shelves. If every visit to the doctor is covered by insurance, where is the incentive to lead a healthy life so visits to the doctor are rarely needed, since it is easier to take a pill than to reform kitchen activities? Health Savings Accounts, accompanied by catastrophic health insurance, should be an option for those who want to pursue alternative paths to good health, allowing us to spend our health care dollars on herbs and supplements (and real food) rather than drugs and surgery, and who, as a result, rarely get sick.

Reforming our health care system is a monstrous job, considering all the vested interests involved, who stand to lose money if we have true reform. We spend an enormous amount of money on health care now, with mediocre results. I pray that Congress will understand what is needed for true reform, resist the blandishments of the vested interests, and enact reforms that cuts costs not only by cutting waste and fraud, but also by enabling true health and effective healing through holistic health care.

Letter to the President

Dear President Obama,

I am concerned that health care reform will be ineffective unless the monopoly of the conventional drug/surgery paradigm is broken. Our present system is too driven by the search for profits which the insurance system just supports. With our present system effective natural therapies, such as natural foods, supplements and detoxification, that restore health and help the body heal, are blacklisted while patentable drugs and expensive surgeries, touted at "science-based," are reimbursed by insurance in spite of their long list of side effects and their poor record correcting the underlying causes of disease. Health care practitioners who use natural therapies are ignored and often condemned by their peers, who are brainwashed by their training into thinking that drugs are the answer, thanks to the excessive influence of the drug industry. Yet these natural therapy advocates often guide patients to successful healing, with therapies that the patient must pay for, when conventional doctors who were unable to help are covered by insurance. This system is broken and must be fixed!

As a dietitian by profession, with a masters in nutrition, now retired and ‘reformed,’ I understand the excessive influence of the drug and food industries on my training and practice, as I promoted the conventional ‘wisdom’ about food, until in retirement I read more widely and realized the benefits of natural whole foods, not Egg Beaters, Heart Smart margarine, and Hamburger Helper. The commercial agriculture/food industry is another piece in the puzzle of our sky-rocketing health care costs, along with our desire for cheap, convenient food, but that’s an issue for another day.

Thank you for your attention to these urgent issues. Let’s develop a system that pays doctors and hospitals to keep patients well, rather than paying more the sicker they become.
